Okara Apricot Muffins

After you have made your Okara flour (see recipe for making okara flour on our blog) here is a healthy recipe for making Apricot muffins. 

How to make okara flour at home.

In a large bowl:

2 cups of whole wheat pastry flour

1/3 cup of yellow corn meal

1/3 cup of okara flour

1 tsp of cinnamon

1 tbsp of baking powder

1/2 tsp of salt

2/3 cup of slivered almonds

Mix thoroughly

In a food processor:

2 tbsp of flax seed mixed with a 1/3 cup of water

1/3 cup of prune puree

2/3 cup of light brown sugar

1 medium banana

2/3 cup of Laura® soymilk

Add Flax "egg" mixture

Process and then add to flour mixture and mix well.

Add 1 cup dried apricots soaked in 1/2 cup of water

Stir and scoop into lightly oiled muffin tin.  

Bake in oven for 25 minutes. 

Lemon Glaze Recipe:

1 and 1/2 cup vegan powdered sugar

4 tbsp of lemon juice
